Ingredients

810g Japanese rice, washed
450g water
105g Sushi vinegar
60g white sugar
15g salt
1/2 tbsp Hinode Mirin
1 squeeze of a lemon (juice)
Rice cooker
Wooden tub/flat tray/big bowl
Fan

How to cook rice:
2 cups (360ml) rice (The
measuring cups that come
with the rice cookers are
180ml)
2 1/4 cups water (1 cup =
200ml)

 

Method

Soak the washed rice in water for 30 minutes prior to cooking, with 1mm less of water than usual.

Heat up vinegar, sugar, salt and mirin together in a pot till the sugar is melted.

Leave aside to cool completely.

Cook the rice according to rice cooker instructions, then decant into a wooden tub, a flat tray or a bowl with a large surface area.

Pour the cooled vinegar mixture over evenly and mix well. Squeeze the lemon over evenly and then mix again.

Leave to cool completely, with the aid of a fan. This is the basic sushi rice.

How to cook rice:
Put rice into a large bowl, add water and quickly run your hand through the rice. Pour out the water.

Use your finger tips, polish the rice in one direction about 10 round quickly. Fill rice with water then repeat the process of step 1 and 2 for 2 to 3 times.

When the water no longer turns cloudy, pour the rice into a
strainer and allow it to stand for 20 minutes. Add water, rice is ready to cook.
