Seared Chicken Breast with Mashed Potatoes

Ingredients

Mashed Potatoes
2 nos Large Russet Potatoes
2 tbsp Butter
50g Cream (or until you reach the desired consistency)
Salt

Chicken Breast
1 nos Chicken Breast
1/4 nos Lemon
1/2 tsp Oregano
1/4 tsp Paprika
1/2 tsp Dijon Mustard
1/2 tsp Garlic Powder
Salt and Pepper

 

Method

Potatoes
Wash the potatoes but do not peel. Place in a pot and cover with water. Bring to a boil then simmer for 15 mins (or until the potatoes are fully cooked, check with a paring knife). Cooking with the skin on ensures it does not absorb excess water.

Strain immediately and, while its still hot, peel with a knife, holding it with a dry cloth in your hand. Mash them using a wooden spatula or a ricer. Add the butter first and mix to melt it then followed by the cream and season with salt.

Chicken Breast

Marinate the chicken with all the items and allow it to sit in the fridge for at least 15 minutes.

Heat up a pan with a thick layer of oil and place the chicken inside, skin side down. The heat should be on medium, not too hot as your want to crisp the skin.

Flip over to the flesh side and continue cooking till it turns golden brown.

Next, place the chicken skin side up on a tray. Roast in the oven at 190C for 6-8 minutes. Remove it from the oven and allow to rest for 2 minutes before serving.
