Pan Seared Fish,Lemon Capers Sauce and Seasonal Vegetables

Ingredients

Fish
6 pieces Salmon/Snapper/Seabass
Fillet (80-90g)

Lemon Capers Sauce
-120g butter
-300g cream
-60g lemon juice
-3 tbsp capers
-3 tsp sugar
-1 1/2 Stalk Dill / Cilantro
(finely chopped)
-salt

Sauteed Vegetables
-Assorted vegetables 100gm
-Butter 15gm
-Oil 1 tbsp
-Salt, pepper and sugar to taste

Method

Fish

Lay out the fish on a tray and season with salt and pepper and some olive oil.

Heat up some pans on high heat and when it begins smoking, add the fish and allow it to brown on one side only. This will be the presentation side. Remove and place it back on a tray and collectively place in the oven at 200C for 4 minutes to cook.

Lemon Capers Sauce

Melt the butter and add capers in medium heat then mix in the cream and let it to boil. Once the cream is boiling put in low flame add in the lemon juice, sugar and cilantro. Whisk till its well mixed. Finally, add salt accordingly.

Sauteed Vegetables

Cut vegetables into sizes you prefer.

Blanch vegetables til its cooked. Set aside in cold water.

Heat up pan, melt the butter and add oil.

Add in blanched vegetables and sautee til its golden brown. Add salt, pepper and sugar to taste.
