Orange Pound Cake with Macerated Berries, Vanilla Chantilly and Crumble

Ingredients

Pound Cake
184g Butter
156g Sugar
3 nos Eggs
45g Milk
170g Cake Flour
1g Baking Powder
1/2 tsp Vanilla
2 pinch Salt
1 nos Orange Zest
1 tsp Orange Blossom Essence

Vanilla Chantilly
200g cream
20g icing sugar
1 tsp vanilla essence/extract

Crumble
50g Flour
25g Butter
60g Sugar
1 tsp Water
1 pinch Salt

Macerated Berries
200g Assorted Berries
100g Sugar
100ml Water

Method

Pound Cake
Cream together the butter and sugar until the mixture becomes light and pale in color.

Add in the eggs one by one and allow it to mix fully before adding the next egg.
Once all the eggs are in, add in the milk, salt, zest and essence.

Finally add in the sifted flour and baking powder. Do not over mix.

Place the mixture in a lined tray and bake at 175C for 15 – 20 minutes till golden brown.

Vanilla Chantilly
Add the vanilla and the sugar into the cream. Whip until firm peaks form.

Crumble
Cut the butter into small cubes but they must still be cold. Combine the butter, salt, sugar and flour altogether and toss to coat everything together.

Using only your finger tips, rub the butter into the flour until you get a texture like breadcrumbs. Do not allow the butter to melt. Add the water and continue rubbing until the pieces become slightly larger than a pin head then stop. Place this streusel on a tray then bake at 170C till its golden brown then allow it to cool then when you remove from the oven. Once completely cooked, you may crush it or use it as it is.

Macerated Berries
Combine all ingredients in a pot and simmer until thickened to a jam like consistency.
