Indonesian Baked Fish in Banana Leaves with Yellow Rice

Ingredients

300g Mackarel or Snapper

Fish Marinade
Blend together

60g Red Sauce
20g Coconut Cream
1 nos Chilli Padi, sliced
1/4 tsp Tamarind, seeds removed
1 cm Turmeric or 1/2 tsp Turmeric powder
1 tsp Coriander Seeds
3 nos Candlenut
3 nos Lime Leaves
2cm Galangal, grated
2 cm Ginger, grated

Aromatics

2 branches Thai Basil or Kemangi
1 nos Turmeric Leaf
2 nos Lemon Grass, crushed
2 nos Salam Leaf
Banana leaf, steamed and softened

Garnish: Coriander

Red Sambal (Bumbu Merah)

200g Red Chilli, seed removed
50g Shallots
30g Garlic
40g Dried Shrimp
60ml Oil
20g Gula Melaka, chopped fine
5g Salt
30ml Water

Yellow Rice

2 tbsp of butter
1 tbsp of cooking oil
2 minced garlic cloves
1 teaspoon of turmeric powder
4 cloves
4 cardamom pods
1 pc of 2cm-long cinnamon stick
2 cups of washed and drained long grain rice( basmati)
Chicken stock, according to cups of rice
1/4 teaspoon of salt
1/4 cup thin coconut milk

Garnish:
Shallots, fried
Raisins
Coriander

Method

Yellow Rice

Heat butter and oil in a frying pan.

Lightly fry minced garlic before adding in turmeric powder. Add cloves, cardamom pods, cinnamon stick and rice. Mix it well for 1 minute on medium heat.

Remove from the frying pan and put in a rice cooker with stock and coconut milk and salt. Mix well and then cover rice cooker.

Cook rice as per normal in rice cooker

Garnish with fried shallots, raisins and coriander

Red Sambal (Bumbu Merah)

In a high speed blender, puree all ingredients with water, except oil and gula melaka

In a pot, add oil and pureed ingredients.

Cook until all moisture is evaporated, chilli oil appeared and sauce becomes bright red

Set aside for use to finish various dishes

Baked Fish

Mix together the ingredients for the marinade and dilute with a little water if needed. It should be a thick paste that can stick onto the flesh of the fish.

Score the fish if using a fillet then coat the fish with the marinade on both sides.

For the aromatics, open up the banana leaf and place the items in a flat layer in the middle, leaving enough space to close the sides over the top.

Place the fish in the middle then wrap it up, using satay sticks to keep it sealed.

Place in the oven at 190C to char the leaves and fully cook the fish. This takes up to 15 minutes.

Remove from the oven, carefully open, being careful of the steam.

Garnish with the coriander and serve with yellow rice.
