Grilled Prawns with Mango Salsa and Guacamole

Ingredients

Prawns
15 nos Tiger prawns

Salsa 
1 nos Red Chilli
1 nos Green Chilli
1/4 nos Red Capsicum
1/4 nos Green Capsicum
1/4 nos Red Onion
10g Cilantro
1/2 nos Tomato
1 nos Mango
1 nos Lime Juice
1 tsp Sugar
to taste Salt

Guacamole
1 nos Avocado, mashed
1/4 nos White Onion, finely minced
1 nos Garlic, paste
1/2 nos Jalapeno, brunoise
10g Cilantro, fine chopped
1/2 nos Lime Juice
1/2 nos Tomato, Small dice

Method

Salsa 

Chillies: Brunoise

Capsicum, onion, tomato, mango: Small dice

Cilantro: Fine Chopped.

In a bowl, mix all the ingredients together and toss with sugar and lime juice and just a little salt to bring out the flavours.

Allow the flavours to develop for 1/2 hour before using.

Note: Be careful to not mash the mango as it may become mushy.

Guacamole

Remove the avocado flesh from the shell and cut off any parts that are brown and bruised. In a bowl, mash it till it is a paste.

Mix the rest of the ingredients in and adjust the flavour with the lime juice and some salt. It should tastes zesty and fresh.

Note: If you want it finely blended, do not add in the tomato as it contains lots of water.

Prawns

Remove the shell from the body but leave the tail and head on.

Skewer on a stick so it will not curl when cooked, season with salt, pepper and oil and bake on 210C for 4-5 minutes.
