Gingerbread Cookies

Ingredients

125g Soft Unsalted Butter
175g Soft Light Brown Sugar
1 Large Egg
80g Golden Syrup (corn syrup will also work)
350g Plain Flour
1 tsp Baking Powder
1 Heaped tsp Cinnamon
1 Heaped tsp Ginger
Pinch of salt
Good pinch of Nutmeg and Cloves

For the royal icing:
400g Icing Sugar
60g Egg Whites
A few tbsp Cold Water

Method

1) Cream the butter and sugar in the mixer until it comes together.

2) Next, add in the egg and golden syrup and mix until combined.

3) Add in the plain flour, baking powder, cinnamon, nutmeg, ginger, cloves and stop when it forms a dough.

4) Wrap the dough up and allow to rest in the fridge for 30 min.

5) Roll out the dough and cut out your desired shapes. Spread them out on a baking sheet and bake at 170C for 10min or until it is turning slightly golden.

For the royal icing:
In a mixer fitted with a paddle attachment, combine the egg white and icing sugar and beat on a medium high speed for 5 min. It should be white and thick in consistency. Place the mixture in an airtight container to avoid it from drying out and hardening. Adjust with colour and thickness to your own liking when decorating the cookies.
