Crostata with fruits

Ingredients

200g plain flour

115g unsalted butter cubed and chilled

2g salt

1 egg

55g sugar

Crostata filling (you can use any berries)

strawberries trimmed and sliced

blueberries

raspberries

sliced oranges/tangerines

Your favourite jam such as strawberry, cranberries, orange marmalade etc.

Method

Preheat over to 190 degrees C and line a baking tray with baking paper.

In a mixing bowl, rub flour, salt and sugar with cold butter into bread crumbs.

Add the egg and knead until a dough forms.

Shape into a disc.

Roll out the dough into a rough circle on baking paper.

Spread a thick layer of jam, reserving 2 inches from the sides.

Fold the dough over the jam.

Whisk the egg with some water and brush around the top of the folded dough.

Bake the crostata for up to 15 minutes or until golden brown.

Let the crostata sit to cool.

Add fresh fruits on top.

Serve with icing sugar sprinkled on top and some ice cream.

Variations:

If you would like to bake some fruits together with the jam, make sure you add some corn flour, sugar and lemon juice to coat the fruits so that it doesnt water and leak out of the crostata base. Dont put alot of fruit as well. You can always add some fresh fruit on top after it is baked.

Add a lattice pattern on top using some of the dough.
