Chicken Curry

Ingredients

300g Chicken Pieces

2nos Potatoes (peeled and cubed)

10g Curry Leaves

30g Coconut Milk

1tbs Curry Powder

1tbs Chilli Powder

1/2tbs Cumin Powder

1/2tbs Coriander Powder

1pc Cinnamon

1pc Bayleaf

3nos Cardamom

3nos Cloves

2nos Star Anise

20g Oil

 

Method

Heat up pot in medium heat and add in the oil. Throw in the dry spices and fry till it’s fragrant.

Then, add in the curry powders. Sauté for 1 min and add in 2tbs of water to make it to a paste. Next add in the potatoes and mix it well.

Pour in 1/2cup water and let the potatoes cook for 5mins before adding in the chicken pieces.

Let it simmer for 5 more minutes then add 1 cup of water and cover the pot with a lid. After that add in the curry leave stir it in. Cook it till the potatoes are soft.

Then add in coconut and mix it well to avoid lumps. Let it boil then turn off the heat.
